St. Patrick’s Day Corned Beef At Corti Bros Meat Market And The Parade!

Butchers at Sacramento’s Corti Brothers meat market are preparing brisket and other cuts for corned beef now as Sacramento prepares for the St. Patrick’s Day holiday.

“In the labyrinthian prep areas behind the Corti Bros. Market meat counter, Carroll trimmed and brine-injected beautiful briskets and other  cuts of beef (pictured),  then sank them under more house-made brine in stainless-steel barrels. There they will soak until Feb. 29, when they will be displayed in the meat department cold cases and sold to home cooks eager to bring a taste of Irelandinto their kitchens. Some of the brined cuts will likely still be available post-March 17th.“

“We’re injecting and barrel-brining more than 2,000 pounds of meat – choice, prime and Wagyu (Kobe-style) briskets, (leaner) eye of rounds, bottom rounds and prime Diamond Jims(from the shoulder), and a limited amount of pork shoulder and beef tongue.”

2,000 pounds!!!  That’s a lot of corned beef.

And Corti Bros also prepares and cooks their own corned beef in their family’s secret recipe for sale in their deli counter.

“The beef is from premium wholesaler J.B.S Meats of Greenley, Colo., said Carroll, who has been with Corti Bros. for 34 years. What’s the difference between the beef cuts? “The texture of the meat,” he  said. “The briskets are chewier and more fatty, while the others are leaner and more tender. But my choice is always the brisket because it has the most flavor….

The water-based brine is made from a proprietary recipe, Carroll said. Some of the ingredients are cloves, cinnamon, bay leaf and pickling spices, but “nobody else has this recipe.”

For the beef Carroll is brining now, prices will range from $4.99 a pound to $8.99 a pound, depending on the cut. Pre-order at (916) 736-3805 .

Corned beef may be the Irish St Patrick’s Day tradition (well, plus the green beer!!!) but Corti Brothers is the Sacramento meat market tradition.  (Plus Taylor’s meat market and we will check on their corned beef and plug it in to this post for you.

Get ready!  The parade and festivities are in Old SSacramento tomorrow.  Get our little leprerhauns in their costumes, or paint shamrocks on their cheeks.

March 18th:

Sacramentan’s celebrated St Patrick’s Day with the wearin’ o’ the green in big numbers on a very gray day.

It was cold and rainy when it wasn’t just gray and gloomy in Sacramento but that didn’t stop people from ining up for the parade in large numbers when things dried out for a bit, doing the good old pub crawl in Od Sac and in downtown/East Sacramento and other spots, as well as eating every single morsel of corned beef and cabbage avaiable to them!!

“A roster of 1,500 participants marched in the parade, and ranging from the young cheerleading group AlphaOmegaCheer.com to Chapter 500 of Vietnam Veterans of America.One of the more unusual participants was 20-something Aimee Alejandre, whose lower body was encased in quivering mermaid green.To the uninitiated, her sea-worthy mermaid suit looked just like a once-a-year St. Patrick’s Day prop.But this suit is serious business. Alejandre is a practicing mermaid at Sacramento’s Dive Bar, which she was representing at the parade.

Saturday afternoon, she waved from the back of a pedicab powered by her boyfriend – fellow merman Antwan Lashay. Both work night swim shifts at the Dive Bar, where they entertain from a 40-foot-long saltwater tank above the bar. ”
